Red, White, and Blue(berry) Cheesecake Bars

I will not apologize for my love of Cheesecake Bars. I know they might not be true cheesecake from a purist point of view, but they’re still just as good, yet easier to make and feed more people! So, on we go. Posting various forms of the every-amazing cheesecake bars.

This version is patriotic. Perfect for the Fourth of July. Or…any other day for that matter! The cheesecake itself is Banana, which is a total winner. But then you add the pop of the berries…. it’s simply.. chef’s kiss. Just that good!

In fact, if you’re planning on bringing this to any patriotic parties this weekend, do yourself a favor and double the recipe. And set some aside just for yourself. I promise you that these are melt-in-your-mouth, can’t-stop-thinking-about-it, GOOD. Trust me on this!

Red, White, and Blue(berry) Cheesecake Bars

Ingredients

Crust
  • 2 cups of graham cracker crumbs (about 13 crackers)
  • 1/4 cup brown sugar
  • 10 tbsp butter (melted)
Banana Cheesecake Filling
  • 2 large, ripe Bananas (mashed)
  • 24oz softened Cream cCheese (3 bricks)
  • 3/4 cup granulated Sugar
  • 1 tsp Vanilla
  • 1/2 tsp Salt
  • 2 Eggs
  • 1 1/2 cups Whipped Cream (homemade or store bought, whichever you prefer)
  • 3/4 cup of Sliced Strawberries
  • 3/4 cup Blueberries

Instructions

  1. Preheat your oven to 350 degrees, then line a 9x13 pan with foil, making sure it sticks up both of the sides so you can easily remove it after baking.
  2. Mix your 2 cups of crushed graham cracker crumbs, 1/4 cup of brown sugar, and 10 tbsp of melted butter. Set the mixture into your pan, pressing it up the sides about 1/8 of an inch. Put it in the oven and bake for 10 minutes.
  3. While your crust cooks, combine the 2 mashed bananas, 24oz of cream cheese, and 3/4 cup of sugar with an electric mixer. Combine well, until there's little to no chunks.
  4. Add the 1 tsp of vanilla, 2 eggs, and 1/2 tsp of salt to the cheesecake batter and combine. Pour over the graham cracker crust and bake for 33-36 minutes, until there is only a slight jiggle.
  5. When it's done baking, let it come to room temperature, which will take about an hour. Then let it chill for at least 3 hours in the refrigerator.
  6. Right before serving, top it with 1 1/2 cups of whipped cream, then the sliced strawberries and blueberries. Enjoy!
