Sausage Gnocchi Soup

It’s soup season! even if it’s still 80º in Arizona, I’m just going to ignore that fact and enjoy it, more specifically with this Sausage Gnocchi Soup.

This soup is So fast and easy, plus filling! The thick, creamy base is mixed with bites of Gnocchi, Ground Sausage, Spinach, and then you get the occasional pop of flavor from a sun-dried Tomato…. yum! You’ll be craving it for days afterwards.

Sausage Gnocchi Soup

Sausage Gnocchi Soup

Ingredients

  • 1 lb Ground Sausage
  • 1 small White or Yellow Onion (diced)
  • 2 Tbsp Minced Garlic
  • 3 cups Chicken Broth
  • 1 Tbsp dried Rosemary
  • 1 16oz package of dried Gnocchi
  • 1/2 cup packed Spinach
  • 1/3 cup Sun-Dried Tomatoes
  • 1/2 cup Water
  • 2 tsp Cornstarch
  • 1 pint (2 cups) of Half and Half
  • Salt and Pepper to taste

Instructions

  1. Heat a large pot on your stove top to medium heat. Add in your 1lb of Ground Sausage, then crumble and brown it. Season with a little bit of Salt and Pepper. Remove from the pot, leaving a little bit of the cooking fat at the bottom.
  2. In the same pot, add in your diced white or yellow Onion and cook for a few minutes until it starts to become translucent, then add in your 2 Tbsp of Minced Garlic and cook for another couple minutes.
  3. Add in the 3 cups of Chicken Broth, 1 Tbsp Dried Rosemary, and 1 package of Dried Gnocchi. Turn it to medium high and let it come to a simmer for about two minutes.
  4. Turn the heat to medium, then add back in the Ground sausage, along with the 1/2 cup of chopped Sppinach and 1/3 cup of Sun-dried tomatoes. In a small bowl, whisk together the 1/2 cup of water and 2 tsp of Cornstarch, then mix it into your pot, along with the pint of half and half. Season to taste with Salt and Pepper.
  5. Let it simmer for about 5 minutes until thickened, then enjoy!
