Pesto Gnocchi Dinner

With my Husband’s new work schedule require him having to miss dinner a few nights a week, I’m on the hunt, even more than ever, for quick and easy dinner for me and my three kids. Because after a full day of being mom, (as much as I love to cook!) I just need to get dinner and bedtime rolling as soon as possible!

Enter this Pesto Gnocchi Dinner, which can be made in 20 minutes, for about $10 from Trader Joe’s items. I cleaned out my freezer the other day and created it, and I think it will turn into a new weeknight staple over at the Millett house!

I sure wish it photographed better, but you’ll just have to trust me on this one- it’s a keeper! Not heavy or greasy, cheap, and comes together SO quickly. My favorite attributes in a dinner. I’m sure yours as well!

Pesto Gnocchi Dinner

Pesto Gnocchi Dinner

Ingredients

  • 1 White or Yellow Onion (diced)
  • 12oz Chicken Sausage (I used Garlic & Herb, you can pick your favorite) (sliced)
  • 8oz Chopped Frozen Spinach
  • 14.1 oz bag Trader Joe's Sweet Potato Gnocchi
  • 1/2 cup Pesto
  • Salt and Pepper to taste

Instructions

  1. In a large skillet turned on medium heat, drizzle some Olive Oil. Place the diced Onion into the pan and heat until it just starts to become translucent and fragrant, stirring occasionally. Then add in the sliced 12oz of Chicken Sausage and stir occasionally again, until it starts to brown.
  2. Add in the 8oz of Frozen Chopped Spinach, mix it together, and cover to let the Spinach steam, about 5 or so minutes.
  3. Turn the heat to Medium low, and add the bag of Sweet Potato Gnocchi and 1/2 cup of Pesto. Mix together, and cover again, just for a few minutes, until the gnocchi is thawed and heated through. Keep a close eye on it, to avoid over-cooking the Gnocchi and making it soggy.
  4. Season with Salt and Pepper, then enjoy!
