Pear Prosciutto Salad

Something about making a salad for yourself just makes you feel like a real grown-up, am I right?

This salad will have you excited about adulting though, because it’s combination of crispy prosciutto, blue cheese crumbles, and the slight sweetness and crunch of a pear will have you wanting more! This salad is filling and easy enough as a quick lunch, but also would make a great side dish at your next dinner. Make the star of the show your salad!

Pear Prosciutto Salad

Ingredients

  • 4 Prosciutto Slices
  • 1 Pear (sliced into bite-sized pieces)
  • 1/2 cup Blue Cheese Crumbles
  • 3 cups baby Arugula
  • 1/3 cup sliced Almonds
  • 3 Tbsp Balsamic Vinegar
  • 3 Tbsp Olive Oil
  • 1 Tbsp Honey or Agave Nectar
  • 2 tsp Minced Garlic
  • 1/2 tsp Salt and Pepper

Instructions

  1. Preheat your oven to 375º, then place your 4 strips of Prosciutto on a baking sheet. Bake for 10 minutes.
  2. Meanwhile, take your other salad ingredients- 1 Pear, 1/2 cup Blue Cheese Crumbles, 3 cups baby Arugula, and 1/3 cup sliced Almonds, and toss together.
  3. Then make your vinaigrette by throughly mixing together 3 Tbsp Balsamic Vinegar, 3 Tbsp Olive Oil, 1 Tbsp Honey or Agave Nectar,2 tsp Minced Garlic, and 1/2 tsp Salt and Pepper.
  4. Wait until your Prosciutto has cooled for about 5 minutes, then crumble it on top of your salad ingredients and drizzle your vinaigrette over your salad. Enjoy!
