Peach Goat Cheese Salad

I don’t know about you, but I have the hardest time trying to figure out what to put in salads. I know the opportunities are endless, but that’s part of my problem- there’s just so many choices!

I ran into this problem a couple weeks ago. I knew I wanted to have a salad for lunch, but I wasn’t sure what I wanted in it. Thankfully, my choice was made up for me when I realized I needed to eat certain items in the fridge before they went bad. I had the smallest nub of Goat Cheese left, and decided to throw it in there. and man… it did not disappoint. I don’t know why I didn’t do think to throw Goat cheese in salads earlier!

And so, this salad started to form. Only these are made up with the ingredients I * wish * had been in that original, clean-out-the-fridge salad. Goat cheese for creaminess and tang, Poppy seed dressing and peach slices for sweetness, Bacon bits for that smokey flavor… yum!

Peach Goat Cheese Salad

Peach Goat Cheese Salad

Ingredients

  • 1/2 large Peach
  • 4 oz Goat Cheese
  • 4 stalks Green Onion
  • 3 cups Baby Arugula (packed)
  • 1/4 cup Glazed Walnuts
  • Poppy seed Dressing
  • 1/4 cup Bacon Bits (optional)

Instructions

  1. Slice and quarter the 1/2 Peach, and chop the 4 stalks of Green Onion. Carefully chop the Goat Cheese (this is easier to do when it's cold) into your desired size.
  2. In a large bowl, place the 3 cups of Baby Arugula and all the toppings- the peach slices, green onions, goat cheese, 1/4 cup glazed Walnuts, and 1/4 cup of optional Bacon Bits. Toss together, then top with your desired amount of Poppy seed Dressing. Enjoy!
