Cucumber Basil Lemonade

Summer is almost gone… well. Kinda. It’'s still over 100º most days here in Arizona, but I’m getting antsy to start my fall baking, so I’m going to call summer almost gone!

Anyways. I was able to think of one last recipe that screams ‘summer’- Lemonade! But not just any lemonade. Basil Cucumber Lemonade! The flavor profile is definitely one that might be odd to think about at first, but I promise- it is SO divine! the flavors of cucumber and basil are subtle, but just enough to take the edge off the kick from the lemon.

I’m actually going to be making this for a brunch I’m hosting next week - that light green color is going to look gorgeous sitting on the table!

Cucumber Basil Lemonade

Cucumber Basil Lemonade

Ingredients

  • 1 cup Freshly Squeezed Lemon Juice
  • 2 Cups Cucumbers (chopped & peeled)
  • 4 Cups Water
  • 2/3 cup Fresh Basil (roughly chopped)
  • 1 Cup Sugar

Instructions

  1. Combine all the ingredients- 1 cup freshly squeezed Lemon Juice, 2 Cups Cucumbers (chopped & peeled), 4 Cups Water, 2/3 cup Fresh Basil (roughly chopped), and 1 Cup Sugar into a blender.
  2. Blend on medium power until smooth, about 1-2 minutes. If you wish, pour through a strainer to ensure all the pulp or smaller chunks are gone. Make sure to stir it well before drinking, separation is natural. Enjoy!
