Crab Melt

I’m so excited to share one of my favorite recipes here on the blog!

This Crab Melt was inspired by something I ordered at a soup and salad restaurant. It’s one of those moments where you say ‘actually… this is pretty easy! I can make this myself!’ So I did.

It’s a cheap meal, that comes together in 30 minutes or less. I think it’s a great easy dinner that doesn’t heat up my kitchen in the summer months, but it’s also something you can freeze and eat for later- even in individualized plastic bags and then thaw in the morning before making one for lunch!

The combination of the crab, bacon, and avocado is hard to beat, but sandwich it between two slices and havarti cheese and then Sourdough bread? It’s the definition of savory goodness!

Crab Melt

Crab Melt

Yield: 6-8 Sandwiches

Ingredients

  • 1 lb cooked Crab (imitation is fine)
  • 1/4 cup mayo
  • 3 Tbsp lemon juice
  • 1 Red Bell Pepper (finely diced)
  • 1 tsp Garlic powder
  • 1 tsp Onion Powder
  • 1/2 tsp Paprika
  • 1/2 tsp Lemon Pepper
  • Salt to taste
  • 12-16 slices of Bread (Sourdough recommended)
  • 12-16 slices of your favorite cheese (Havarti recommended)
  • 12-16 slices of Cooked bacon
  • 3-4 Sliced Avocados

Instructions

  1. In a medium sized mixing bowl, shred or chop up your 1lb of crab. Then add in and combine 1/4 cup mayo, 3 Tbsp lemon juice, 1 diced Red Bell Pepper, 1 tsp Garlic powder, 1 tsp Onion Powder, 1/2 tsp Paprika, 1/2 tsp Lemon Pepper, and Salt to taste.
  2. Place it on your bread, (depending on the size of your bread, this will make 6-8 sandwiches) with Bacon and Avocado, between two slices of cheese. Butter each side, then cook on a heated skillet until both sides are golden brown and the cheese is melted. Enjoy!
