One thing you should probably know about me- I LOVE the flavor of lime! You’ll see it in a lot of my recipes, because I can never get enough of it. These Coconut Lime Bars hit the spot for my lime-flavored cravings, and are such a fun contrast of texture and flavors that’s perfect for warmer weather! The crust isn’t the same shortbread crust you’d find on lemon bars, which are similar in texture. I combined Graham crackers and shortbread crust together, to give it a slight taste of a Key Lime Pie. It's totally addicting!

Coconut Lime Bars

These Coconut Lime bars are every lime-lovers dream! They have that addictive combination of sour and sweet, and then they're topped with toasted Coconut Flakes.

Ingredients

Graham Cracker Shortbread Crust
  • 2/3 cup All-Purpose Flour
  • 1/3 cup Graham Cracker crumbs (about 2 crackers)
  • 1/2 cup (1 stick) Unsalted Butter
  • 1/2 cup Powdered Sugar
  • Pinch of Salt
Coconut Lime Filling
  • 2 Eggs
  • 3/4 cup Granulated Sugar
  • 2 Tbsp Powdered Sugar
  • 2 Tbsp All-Purpose Flour
  • 1/4 cup freshly squeezed Lime juice
  • zest of one Lime
  • 1/4 tsp Salt
  • Green food coloring (optional)
  • 1/2 cup Sweetened Coconut Flakes

Instructions

  1. Preheat your oven to 350º, then line a 9x9 baking dish with parchment paper- sticking out enough so that you can easily remove it when it’s done baking.
  2. Combine the ingredients for the crust- 2/3 cup All-Purpose Flour, 1/3 cup Graham Cracker crumbs (about 2 crackers), 1/2 cup Unsalted Butter, 1/2 cup Powdered Sugar, and a pinch Pinch of Salt in a small bowl. Press the dough into your baking dish, making sure to press it up 1/4 inch up the sides. Let it bake for 10-12 minutes, until golden brown.
  3. While that’s baking, combine the 2 Eggs , 3/4 cup Granulated Sugar, 2 Tbsp Powdered Sugar, 2 Tbsp All-Purpose Flour, 1/4 cup freshly squeezed Lime juice, zest of one Lime, 1/4 tsp Salt, and the optional Green food coloring. Pour over the cooked crust, and bake for 20 minutes in the middle rack of your oven.
  4. After it’s been baking for 20 minutes, sprinkle 1/2 cup sweetened Coconut Flakes over the lime bars, then gently press into the filling with the back of your hand. Move your rack to the top tier in your oven, then bake for 5 more minutes.
  5. Let cool for 30 minutes,  before eating room temperature, or if you prefer them cold, let them chill in the fridge until it's time to serve. Enjoy!
